As more people are becoming environmentally aware, words such as ECO, eco-friendly and organic have become life keyword. Such eco-friendly lifestyle has been segmented into eco-friendly food lifestyle, and eco-friendly food lifestyle has led 3-slow dining table, which are low-calorie, low-sodium, and low-fat as well as slow food culture. Shabu Shabu uses fresh vegetable and meat as main ingredients and is a good fit for the current trend. ‘The more you eat, the lighter you feel’ Shabu Shabu holds many images such as freshness, lightness, and warmth; however, we chose to focus on its freshness on our design. We designed the space so the natural texture of ingredients is shown in the Shabu Shabu restaurant.
