A custom brass light fixture, a runway of herringbone flooring and a backdrop by famous Belgian born artist Caratoes all marrying the existing raw structure of this 100 year old building with the classic elements of a New York grill.

The ‘courtyard’ seating area is lit by festoon lighting and hung with bunting and paved in stone, crazy-paving. The show kitchen has the appearance of a temporary structure made with found and recycled materials such as oil drums, milk crates and bamboo.

Mama’s Buoi in Surry Hills was a labour of love to bring to life the founder Bao Huong’s mother’s authentic home cooked meals. Apart from the obvious play on words, a Buoi is a small grapefruit, native to South Asia, and grown in backyards of Vietnamese immigrants in Melbourne.
