The new ERGON, right by Syntagma square, is the one in downtown Athens, located on Mitropoleos Street and opens up to Petraki pedestrian alley. With origins in an Athenian tavern, a typical grocery shop and the legacy of the Ergon family, the store was designed with the downtown Athenian features in mind. The deli is located on the ground level, on Mitropoleos street.

The ceiling is a Ζoellner plate, revealed and preserved. One area in the front is covered with a painted sheet metal that was found and preserved also. The floor is terrazzo and the walls of the deli were covered with white tiles. On the next level, the kitchen is located behind a glass/metal partition structure as well as a part of the dining area. The majority of the seating is located on the mezzanine.

The metal structure of the kitchen expands vertically, following the inclined geometry of a smoke stack in which houses various mechanical installations. The stack appears also on the facade, in the form of a slope. The materials used in ERGON are aged wood, a distinctive blue hue and metal in lighter tones. The Athenian downtown marble is used on tables and desktops but also in secondary areas, on a paved floor.
