As in many a capital city across the planet, the culinary scene in Mexico City continues to evolve at full speed, boasting a wide array of refined global cuisines and equally sophisticated local flavours. In the latter category falls Xilote, a newly opened dining establishment exclusively dedicated to the traditional cuisine of the southern Mexican city of Oaxaca. Situated on the premises of LIVIX, a new apartment and retail complex in the tony Granada area of town, Xilote occupies a lofty 120 sqm. (1,292 sq.ft.) ground floor unit and features an interior design by Oaxaca-based practice Espacio 18 Arquitectura. The dining establishment is inspired by Mercado de 20 Noviembro, a covered farmers market in downtown Oaxaca, and specifically Pasillo de Humo, an alleyway lined with hawker stalls.

Although distinctly contemporary, the setting aims to be an authentic backdrop for the regional fare that’s served here by Oaxacan chef Carlos Omar Galan Figueroa. The ceiling evokes the alleyway’s exhaust ducts, while monochromatic earth tones dominate the space, creating a welcoming atmosphere. Raw materials, such as volcanic stone, a signature element of Central Mexico, form sloping walls that reference pre-Hispanic structures. In turn, the slopes serve as a base for steel elements that together shape the restaurant’s furniture. Since dining at Xilote is intended as a communal activity, the restaurant sees custom-made large communal tables and benches which incite social interaction.
